Established in 2010, Ceviche are a Peruvian restaurant company offering dining experiences to guests in their four London-based restaurants. They create unique, exciting, relevant and busy restaurants that have their own purpose and a powerful story. Each one is special and different to what came before and is created to serve its local community and have longevity. The company aims for each member of staff to spend their time learning about who they are, how to be happy and how to give their best to themselves and others. Ceviche are conscious of waste management and endeavour to utilise as much of a product as possible with wastage being closely monitored and managed. The company also uses recyclable takeaway packaging to ensure they are minimising their impact on landfill waste. Core values of Ceviche, which all new team members are taught, are dedication and care, go for excellence and to always have a positive energy.

Ceviche are focused on supporting hospitality industry charities, local charities and Peruvian charities. In 2017, they held an event to raise money for the communities affected by the floods in Peru, raising over £6,000.

Every year, Ceviche holds an awards ceremony in which staff nominate each other. This involves a champagne and canapé reception that all employees are invited to attend. Winners are announced and awarded with a trophy, champagne and £100 cash.
